Based in Courgis, just south of Chablis, Domaine Pattes Loup is the personal project of Thomas Pico, one of the most thoughtful and uncompromising voices in contemporary Chablis. With a philosophy grounded in organic and biodynamic viticulture, Pico crafts wines that move beyond convention to reveal a deeper, more textural expression of Chablis’ limestone terroirs.
The domaine’s vineyards are rooted in classic Kimmeridgian limestone soils, rich in fossilized marine elements that define Chablis’ signature mineral identity. Thomas Pico works his vines with rigorous attention to soil life, low yields, and balanced ripeness, favouring natural cycles over intervention. This meticulous vineyard work allows Chardonnay to express itself with clarity, energy, and an unmistakable sense of place.
In the cellar, Domaine Pattes Loup adopts a deliberately non-standard approach for Chablis. Fermentations occur with native yeasts, élevage is often extended, and a significant portion of the wines are matured in neutral barrels rather than stainless steel. This choice brings additional depth, texture, and aromatic complexity while preserving freshness and mineral tension. Sulphur use is minimal, and dosage is never employed.
